Sotol La Higuera is situated in Aldama, Chihuahua by Master Sotolero Gerardo Ruelas. Sotol is differentiated from tequila and mescal because the plant it is made from is similar but different to agave. Dasylirion wheeleri is commonly known as the Desert Spoon plant in English (sotol in Spanish), and is the state drink of Chihuahua, Durango, and Coahuila, and it is produced in a manner similar to the more common artisanal mezcals of central Mexico. The sotol plants are cooked in an outdoor conical oven fired with wood and rocks and then milled by hand with axes before being fermented with wild yeasts in 1,000L pine vats, and then it is double distilled in alembic copper stills. This offering is smooth and herbal with a balanced smokiness and a hint of pineapple fruit.
