Omero Cellars winemaker Chad Stock has a strong winemaking philosophy: "Be humble, work with intent, keep it clean, no additives, let the wine speak for itself." In 2011, Chad started his own label, Minimus, as a series of one-off experiments, focusing on pushing the boundaries of winemaking and viticulture by exploring the possibilities of the diverse terrors of the region. With his Minimus-labelled wines, he tries to never make the same wine twice. Although avant-garde at heart, his experimentation is respectful, exploring traditional techniques rather than hi-tech spinning cones or chemical manipulations, as well as unusual grape varieties that we seldom see on our shores. Chad keeps track of each experiment in his journal, documenting every aspect of the process including conception, implementation, vineyard site selection, and much more. Ultimately, his goal is to use these experiments to grow as a winemaker, and to some day write a craft winemaking book about the experience. This 100% syrah comes from the Stella Maris (SM) vineyard in the Applegate Valley appellation, and is 100% whole cluster fermented, followed by aging in French oak for 10 months (33% new, 67% neutral) before being bottled unfined, unfiltered, and without any added sulfites. Inspired by northern Rhône Dard & Ribo wines, this syrah is lovely with distinct floral aromatics, red strawberry fruit, with a hint of pepper and sumptuously smooth, dry tannins. Organically grown, low-intervention, vegan.
