The Niagara Escarpment is one of the fastest-growing wine regions in New York State, considered warmer and drier than many of the state's other grape-growing areas. Among the newest arrivals on the Niagara wine scene is Liten Buffel Winery, located in Middleport, in Niagara County. Liten Buffel, which means "little buffalo" in Swedish, is the collaborative effort of Zach Klug and his partner Patrick Vaughn. Klug studied winemaking at Niagara Falls Culinary Institute and worked at Freedom Run Winery before launching Liten Buffel in 2015 with an emphasis on low-intervention (or "natural") winemaking. They refrain from using chemical additives, preservatives, additional sugar, and commercial yeast and the wines are bottled unfined and unfiltered. The ‘Faucheaux’ is 100% cabernet sauvignon and is very light on it’s feet with tart black berry fruit and some funk from the natural fermentation process, perfect for those looking for a tart, juicy, light red! Organically grown, low-intervention, vegan.
