Based at two Hudson Valley farms, Breezy Hill Orchard near Rhinebeck and Stone Ridge Orchard near New Paltz, Hudson Valley Farmhouse Cider draws on classic European cidermaking techniques while showcasing robust new world flavors. Producer Elizabeth Ryan is somewhat of a legend in local apple growing circles, having studied cidermaking in Somerset and Hereford, England, and Pomology at Cornell University, where she made her first barrel of cider as a student in 1980. She also spent some time with the inimitable Duponts in Normandy. Both her farms are committed to ecological growing practices and the resulting highly flavored fruit is what makes her ciders so unique yet drinkable. The ‘Wickson’ is one of their single varietal offerings, being made with 100% Wickson apples, a cross of Esopus Spitzenberg and Newtown Pippin. The cider is spicy and powerful with small energetic bubbles, bottled unfiltered and aged in the bottle before release.
