The Henri Germain estate is benchmark for remarkable Burgundy from the Côte. Helmed currently by Jean-François Germain, he is finally receiving the acclaim that is deserved for his exceptional bottlings. His methods are very traditional with organic farming, low yields, and cellar work that keep interference to a minimum. His wines are textural, intense, and awe-inspiring. He vinifies only with natural yeast, no enzymes, and barely any bâtonnage. If the lees are sufficiently clean, the wines are never racked, and élevage lasts 18 months for village wines and 22 for the remainder. The cold cellar makes for a long, low aging, with late malolactic fermentation. The wines see low percentages of new oak, usually between 20-30%, and the wines are bottled unfined and unfiltered. This wine is clean and creamy, with dark cherry fruit and fine tannin. It has evident minerality and a refreshing, solid finish. Great to drink today, but has the potential to age! Organically grown, low-intervention, vegan.
