Four miles east of the Hudson River, in the valley between the Catskill and Berkshire mountains, lies third-generation apple farm, Golden Harvest Farms. Established in 1954, the farm grows over 20 varieties of apples on 200 acres. New York's first farm distillery, Harvest Spirits was established in 2007 to put surplus apples to use; they take on a second life as vodka, Applejack, and specialty brandies. Apples are pressed year round on an antique rack-and-cloth press, fermented into hard cider in stainless steel tanks, and then distilled in a single 100 gallon pot still. 100% Bartlett pears, crushed whole and fermented on the skins, this Rare Pear brandy is minimally distilled twice to retain the gorgeous fresh pear aromas. Aged two years in charred American oak barrels with a single filtration, this is surprisingly dry, with a long toasted oak finish. Its classic style evokes a traditional European brandy.
