George A. Dickel was a merchant in Nashville who entered the whiskey business in the mid 1800s. He opened Cascade Hollow Distillery in 1878, and preferred to make whiskey in the winter because he felt it made it taste smoother, advertising it as “Mellow as Moonlight”. The whiskey is chilled before putting it through charcoal filtration, known as the Lincoln County Process, which assists in smoothing out the flavor. (Dickel is the only Tennessee distillery to do so.) The No. 12 is a blend of older whiskies to achieve deep, assertive flavors with an incredibly smooth finish. It has a concentrated oak influence that includes subtle vanilla notes with hints of maple, butter, and smoke.
