Marie Thibault holds degrees in biology and oenology, and began making wine in the early 2000s. She worked at François Chidaine in Montlouis and fell in love with chenin blanc, inspiring her to start her own 3.5-ha domaine in 2011 in Azay-le-Rideau, also in the Touraine. She converted the vineyards to organic farming and received certification in 2014. Her parcel sits on a gentle, windy slope that is drier than other vineyards in the region, on a plateau of white clay and limestone soil. This dry chenin blanc, the ‘Premier Nez’, spends up to 18 months aging in neutral oak and comes from vines that are 50 years old. Fermented with indigenous yeast and bottled unfiltered, it has depth and complexity, and is rich, aromatic, and very mineral driven. Certified organic, low-intervention, vegan.
