This rarity is one of the few wines to come from Jerez (Sherry) that is made with the sherry grape, 100% palomino fino, and ages under flor, like a sherry. The major difference is that it is not fortified with a spirit, and is simply left to be a handcrafted wine. Palomino fino is a white grape that creates a wine relatively low in acidity and sugar, which is ideal for sherry. Equipo Navazos farms the grapes sustainably from 100% albarizas sanluqueñas soils that are rich in chalk and limestone, the most treasured in the region for the palomino grape. This is a phenomenal example of what this grape can be when allowed to shine without added compounds. The wine spends 42 months under flor: 8 in butts, 24 in tanks, and 10 in barrels that previously held manzanilla first and then palo cortado. This wine is intense and unique, with a tawny color and aromas of almont, flour, salted pretzels and olive. On the palate, it has a sharp acidity with flavors of apple, citrus, and marzipan, reminiscent of sherry.
