Located in the lesser-known Quiroga-Bibei sub zone of Galicia’s Ribeira Sacra, Dominio do Bibei takes pride in the beauty, solitude, and distinct lack of technology in their winery. Starting with backbreakingly beautiful terraced vineyards of slate and clay perched 500-600 meters above sea level, Javier Domínguez and his team maintain a painstaking focus on the character of the land they inhabit and the native grape varietals planted there. 'Lalama' is produced mostly from mencía, although other indigenous varieties such as mouratón, sousón, brancellao, and garnacha lend extra shades of complexity. The grapes were destemmed, crushed and fermented with indigenous yeasts in large open-top wood vats, then raised in used barrels and further rested in vat for a total of around twenty months. This medium-bodied red has crunchy notes of pomegranate and cherry with rocky mineral accents. Hints of hibiscus tea combine earthiness with more fresh red fruit, capped off by a finish that lingers with notes of savory crushed herbs. Organically grown.
