The realm of distilling (or at least its image!) might be dominated by men sporting vast amounts of facial hair, but Delaware Phoenix owner Cheryl Lins has been bucking those stereotypes for quite some time! She’s located in the Catskills town of Walton, NY, and does every step of the process from fermentation to delivery. Her whiskey is made based on early 19th century production methods as described in an old recipe from Kentucky in the 1820s. It’s aged in neutral oak for 6-12 months, and has a wonderful roundness and touch of sweetness from the corn. Cheryl no longer makes this whiskey; this is a special and final release, so enjoy it now while you can!
