Del Maguey are producers of “Single Village” mezcal, which is not common as mezcal producers can tend or source their agave from multiple growers in different villages. Similar to the idea of terroir behind wines, they aim to produce spirits with distinct character and a singular purity from village to village. This one comes from the village of San Balthazar Chichicapa in Oaxaca. They use well water, distill in a copper pot still, and roast the 7-8 year old Maguey for 4-5 days with 5 different types of wood. It’s classically warm and smoky, but contains lots of citrus character with a long, smooth, minty finish. Organically grown.
