Domaine David Duband lies in Chevannes, in the heart of the Hautes-Côtes de Nuits and produces refined and elegant wines from 23 prestigious appellations from Nuits-Saint-Georges to Gevrey-Chambertin. All 17-ha are certified organic, and he also buys organic grapes from small vinegrowers in the region. Since 2008 he has vinified his wines using whole clusters of grapes as the noble bitterness of the stems adds a certain refinement and elegance to pinot noir. Burgundies with finesse and power, delicate and intense!” The Hautes Côtes de Nuits vineyard is situated between 300 and 400 meters altitude and spreads across twenty communes. Vines grow on the hillsides of the valleys that cut though the plateau of Jurassic limestone to the west of the Cote d'Or. 50-60% of the grapes are fermented whole cluster, and after pressing, it is put into barrel, 30% of which are new. After 14 months of élévage, the wine is rached into tank where it rests for three months vefore being bottled unfined and unfiltered. This wine, named after David’s son, displays beautiful freshness and purity of fruit with some depth, a touch of spice, and minerality. Certified organic, vegan.
