Cyrille Servin spent most of his career teaching math in Paris, but always dreamed of having his own vineyard and making wines. He was able to flip a house (one house!) and make enough to retire from teaching and acquire 8 hectares in Cheverny, in the Loire. Today, he has 11-ha of certified organic vineyards, with some of his vines being up to 80 years old, and makes only natural, low-intervention style wine. This quaffable blend of pinot noir and gamay is hand-harvested, fermented in stainless steel, with small portions being aged in neutral oak. It has generous fruit centered around a core of plum, with a touch of earthiness and a faint kiss of oak. Certified organic, low-intervention, vegan.
