Alvaro Espinoza makes Cucao wines from purchased fruit in the Colchagua Valley in Chile. He has been heralded as Chile’s most talented winemaker and is a great promoter of biodynamics. He attended the University of Bordeaux and spent time working under great minds in California before returning to Chile to single-handedly convert Chile’s viticulture from industrial to agricultural. He is also the champion for carmenère, putting it on the map with the first bottling of the grape that would become the country’s favorite. This wine is 100% cabernet sauvignon that goes through malolactic fermentation but is fermented at low temperatures and slowly, to preserve the fruit character and avoid over-extracting tannin. It is aged for 6-8 months in French and American oak, and in the bottle for three months after. The result is a medium-bodied, medium-tannin cabernet with a core of pure dark fruit with a balanced oak and definite streaks of dark herbs like oregano and rosemary. Sustainably grown.
