Chateau Le Payral has been run by Thierry and Isabelle Daulhiac since 1992, and it was handed down to them from the previous two generations. It is located in Bergerac area, which lies east of Bordeaux, nestled between the appellations of Montbazillac and Sainte-Foy in the small commune of Razac de Saussignac between two small offshoots of the Dordogne River. When they took over, they slowly started converting their fields to organic, nearly biodynamic now. Their soils are pebbled and muddy, heavy with clay, silt, and sand, which, in addition to their location, leaves them susceptible to mildew and rot. The organic practices have dramatically reduced the negative consequences of working in the area, making it actually easier to produce better wines. This cuvée is a 100% merlot that sees no oak, only stainless steel throughout its fermentation and short aging. They add no additional sulfites during aging or bottling, only those natural in the winemaking process are present. From 1 ha of 80 year old pre-war vines, it was bottled unfiltered and unfined. Clean and pretty, this offers up succulent dark berries, black currants, and red plum flavors with hints of violets and graphite and a mouthwatering balance of acidity and lightly grippy tannins. Organically grown, low-intervention, vegan.
