Castello di Stefanago is a family-owned and operated winery, built up through years of hard work put in by several generations of the Baruffaldi family. Currently at the helm are Giacomo and Antonio, who have been committed to 100% organic cultivation since 1998. They are also very conscious of biodiversity, spreading their 20-ha of vines throughout other crops and a diverse ecological landscape. Their estate is situated in Lombardy, in the Oltrepo Pavese hills 350-500 meters above sea level, with their cellars in a magnificent castle that operated from the 11th-14th centuries. This wine is from the Provincia di Pavia IGT, as it does not fall under the stricter requirements for the Oltrepo Pavese DOC, but this actually gives the winemakers more creative license. This red is a blend of two native grapes, uva rara and croatina, with a small addition of barbera from clay soils that are fully de-stemmed and fermented with natural yeast, and aged in only stainless steel with no filtration before bottling. The absence of oak makes this wine precise, bright and floral with generous fruit and a hint of wild forest floor. It has wonderfully smooth, balanced tannins and a dry finish.
