Caol Ila was founded in 1846 in Glasgow, on a little bay on the sound of Islay, near Port Askaig. It is named for the sound (Caol Ila in Gaelic) in which the little puffer ships made their round trips to the mainland. It has seen many owners since 1846 and experienced a time of closure, but the demand for blended whisky brought it back, and it is now the biggest distillery on Islay. They have 6 copper pot stills, use traditional methods, and do extended ageing in spent oak. The 12-Year is smooth and light-to-medium in body, and has notes of citrus, damp grass, crushed herbs, and oily sea spray on the nose. The peat smoke is more apparent on the palate and finish, with a semi-sweet start and slightly sour, smoky, endlessly long finish.
