The Giacomo Borgogno e Figli cellar was founded in 1761, and is among the oldest names in wine in the Langhe. They produce legendary Barolos and have an extensive library collection that has been meticulously safeguarded for decades, and they remain committed to this practice to provide wine drinkers with the opportunity to enjoy well-aged Barolo. They don’t just produce Barolo, however, they also make other red and white wines, grappa, chinato, and this wonderful white vermouth! The base is made with cortese wine, and it is infused with 37 different extracts of roots, leaves, flowers, seeds, and fruits that have been left to macerate in alcohol for a minimum of two months. The main feature is the quinine, from the Cinchona tree bark, of which they use three varieties. This infusion is then blended with sugar, alcohol, and the cortese wine, to make a light, aperitif-style vermouth with citrusy notes of orange, lemon, and grapefruit. It can be enjoyed neat, on the rocks, with hot water, with dark chocolate, or as a base for cocktails!
