Bodegas Maires was founded by cousins Fernando and Pablo in 2015 with the vision of reviving their winemaking ancestors’ work and bringing presence to the Toro appellation in Castilla y León. Maires is a family nickname that goes back four generations, back to the ones who were viticulturalists. Their line of wines is called Ademán and they are meant to allude to the essence of a family project that reflects the influence of the passage of time, with each bottle having a picture of hand gestures that represent a stage in the person’s life. The “Adalia” is a supremely elegant verdejo that captures the essence of terroir, with some lees aging and brief time in very lightly toasted French oak barrels. It is clean and bright with yellow and green fruit and flowers with a delicate herbal quality and hints of fennel and toasty green tea. It is round and silky on the palate with wonderful structure and length.
