The ArteNOM line of tequilas are made by different distillers, representing selection and regional distinction. Master distiller Felipe Camarena produces the NOM 1579 at his own Destilería El Pandillo, using stressed, hillside agave plants grown in tequila’s highest-altitude growing region. The plants are slowly roasted in brick ovens and macerated intact with their fibers for a rich, full flavor. He ferments with 50% rainwater and double distills in copper pot stills, then aerates prior to bottling. It has a nose of “rising pastry dough, spring rain, mint, and bold roasted agave”, and a “velvety and wine-like” palate with a “fresh chili tingle, white pepper, and spearmint candies” on the finish.
